2000 Single Vineyard Limited Cabernet Sauvignon
Tasting notes
Dark red to black color with the slightest hint of garnet. Dark blackberry and cassis fruit aromas with toasted oak, cocoa, cola, vanilla and slight butterscotch. This is a full bodied wine with dark fruit and toasted oak flavors. It has nicely firm acidity with good depth and nice tannins and a slight hint of pepper on the long finish.
Production notes
100% Cabernet Sauvignon from Hedges South Block Vineyard Lyre and VSP trellised sections. Aged 17 months in 50% new and 50% one year old Centre of France barrels.
Other notes
Harvest Notes: Very hot followed by cold, wet windy temperatures during bloom and set caused uneven set. Combine this with a typically warm summer and ideal extended fall ripening conditions of warm days and cool nights and the result is a somewhat unusual combination of generally lower acidity and pH in the grapes. A challenging but ultimately great vintage for those patient enough to let the grapes achieve optimum maturity and the flavors that come along with it.
