Tasting notes
Deep, dark almost black color. Leather, dried blackberry, sweet cinnamon, wet earth, black cherry compote, clove and cola with hints of black licorice, menthol, smoked meat and sage. The entry is full, soft and slightly sweet but quickly gives way to leather, toast, dried blackberry and an explosion of vibrant, mouth coating tannins that create excitement in your mouth without excessive astringency or any bitterness. The finish goes on forever. Wow! If you like big, full-bodied but not flabby or excessively alcoholic Cabs, this is the ticket
Production notes
Grapes are from Hedges Estate Vineyard, South Block, which is in the Red Mountain AVA and is biodynamically farmed. This wine was cold soaked overnight then inoculated with yeast, fermented for 9 days on skins while being pumped over twice daily before pressing to barrels, where it was inoculated with malo-lactic bacteria. It was 100% barrel aged for 10 months in 80% new oak consisting of 25% French and 75% American.
Other notes
Harvest Notes: As in 2010, 2011 was another excellent but slightly unusual vintage in Washington State. The La Nina current again made for cool spring temperatures, which delayed bud break and slowed early season growth. When combined with a warm but not particularly hot summer, veraison was one to two weeks late, which meant Cab had a lot of time to develop intense color and flavor without producing high sugar content.
